Sorakai Paalu Posina Koora (Opo Gourd, Bottle Gourd cooked in milk)

You might have eaten Sorakai (Opo) curry many times before but this particular recipe will change the way you think about it. This is my mom's recipe and she cooks Sorakai (opo) in a pressure cooker which makes it very tender and it melts in the mouth. No words can describe the taste of this dish you have to experience the taste to truly appreciate it!



Ingredients:-
Sorakai (opo)- 1 small
Onion- 1 small
Green Chillies- 2
Milk- 1 cup
Ginger-garlic paste- 1 Tsp
Salt- to taste
Chilli powder- 1 1/4 Tsp

For Tadka (Seasoning):-
Oli- 1 Tbsp
Whole Red chilli- 1
Mustard seeds- 1/4 Tsp
Cumin- 1/4 Tsp
Turmeric- 1 pinch
Curry leaves- 4 to 5

Procedure:-
1. Peel and chop Sorakai (Opo) finely. Chop the onions and slice the green chillies.

2. To a hot pressure cooker add Oil and add whole red chilli. After a minute add mustard seeds, cumin, turmeric and curry leaves. Once the seeds pop, add onion and green chillies. Cook them for 2 minutes and add Sorakai (Opo) pieces, salt and mix everything. Close the lid of the cooker and wait until you hear the first whistle. After first whistle, turn the heat to lowest possible and set the timer for five minutes. After 5 minutes, turn the heat off.

3. Once the pressure is gone and the lid opens, turn the heat on again. Let all the water evaporate and then add chilli powder. Now add the milk and let it get reduced. Look for the desired consistency of the gravy. Garnish with Cilantro and serve.
You can serve this dish with Rice or Roti.
